There are so many things that we cannot control when it comes to our health.  Why would we choose to ignore the one thing we can control, the one thing that can make the difference between dying of a debilitating disease and simply dying of old age?  

That one thing is the food we eat every day.  Even if we eat an incredibly healthy diet avoiding processed foods, high sugars, artificial ingredients or hydrogenated oils, we can still be unhealthy.  The reason is the loss of nutrition in our foods.  For example, cabbage tested in the 1960’s was a significant source of vitamin C, but today, the vitamin C content of cabbage is barely traceable.  The average potato has lost 100% of its vitamin A and 57% of its iron.  Modern farming methods, pesticide use and distance transportation have all combined to bring to our table foods empty of nutrients.

We also each have different nutritional needs at different times.  The construction worker won't need the same nutritional levels that a secretary will, while a person fighting off a cold won't need the same nutrient combinations that a pregnant woman will.  All of us want to make healthy choices when we eat, but with limitations of time, money, knowledge and just finding something everyone in the family will eat can gradually create nutritional deficiencies in every one of us.
